Rindless Dry Cure Back
Produced from short-cut rindless pork backs. Maximum fat over the eye is 8mm, width between 180mm and 190mm. Cut between the 4th and 5th rib at shoulder and ex-chump. Product is hand rubbed with our recipe of salts and sugar mix, and left to mature. Packed in Cheshire Oak and Red Tractor brand packaging.
